Method
 

  1. In a medium saucepan over medium heat, combine cherries, balsamic vinegar, half the olive oil, honey, thyme, and a pinch of salt. Bring to a simmer, mashing cherries gently with a spoon.
  2. Simmer for 8–10 minutes until cherries break down and mixture thickens. If desired, whisk in cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp water) and cook 1–2 minutes more. Remove from heat and stir in lemon zest.
  3. While sauce cools slightly, pat chicken dry and season with salt and pepper. Thread chicken cubes evenly onto skewers.
  4. Preheat grill or grill pan over medium-high heat. Brush grates with remaining olive oil.
  5. Sear skewers 4–5 minutes per side, brushing with cherry-balsamic sauce during the last 2 minutes of cooking, until chicken reaches 165°F internal temperature.
