Method
 

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine turmeric, ground ginger, garlic powder, smoked paprika, black pepper, and sea salt to create the spice blend.
  3. Pat pork medallions dry and coat thoroughly with 2 tablespoons of olive oil, then season generously with the spice mixture, massaging into the meat.
  4. Let pork marinate for 10 minutes while preparing vegetables.
  5. Toss sweet potato, carrots, red onion, bell pepper, and Brussels sprouts with coconut oil and remaining spice blend. Season with salt and pepper.
  6. Heat large oven-safe skillet over medium-high heat with remaining olive oil.
  7. Sear pork medallions for 2-3 minutes per side until golden crust forms.

  11. Add minced garlic and fresh thyme to vegetables in final 5 minutes of cooking.
  12. Deglaze skillet with vegetable broth, scraping up any browned bits to create a pan sauce.
  13. Slice pork medallions and serve alongside roasted vegetables, drizzled with pan sauce.
