Method
- Preheat oven to 400°F (200°C).
- Toss sweet potato and broccoli with olive oil, paprika, salt, and pepper. Spread on baking sheet, roast 20-25 mins until golden.
- While roasting, cook lentils if not pre-cooked; season lightly.
- Whisk tahini, lemon juice, water, and maple syrup for dressing.
- In a bowl, arrange spinach/kale as base. Add lentils, roasted veggies, cabbage, tomatoes, and avocado.
- Drizzle with tahini dressing.
- Serve immediately and enjoy!
Notes
Substitute lentils with chickpeas or quinoa. Add roasted beets, carrots, or seeds for crunch. For extra protein, add grilled tofu. Use gluten-free ingredients as needed.
