This simple and delicious meatloaf is a classic comfort dish made with ground beef, breadcrumbs, eggs, and a savory glaze. Perfectly tender inside with a caramelized exterior, it’s sure to become a weeknight staple.

Ingredients
  

  • 2 pounds ground beef 80/20
  • ½ cup panko breadcrumbs
  • cup beef broth
  • 2 large eggs whisked
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • cup ketchup or BBQ sauce
  • 2 tablespoons light brown sugar

Equipment

  • 9×5-inch loaf pan
  • Large mixing bowl
  • Small bowl
  • Foil and non-stick cooking spray
  • Oven-safe meat thermometer

Method
 

  1. Preheat the oven to 375°F. Line a 9×5-inch loaf pan with foil, spray with non-stick spray, and set aside.
  2. In a large bowl, combine ground beef, breadcrumbs, broth, eggs, onion, garlic, Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Gently mix until just combined.
  3. Transfer the mixture into the prepared loaf pan, pressing gently to shape.
  4. In a small bowl, whisk together ketchup (or BBQ sauce) and brown sugar. Spread half of the glaze evenly over the meatloaf.
  5. Bake for 45 minutes, or until an oven-safe meat thermometer inserted into the center reads 160°F.
  6. Remove from oven, brush with remaining glaze, and bake for an additional 10 minutes.
  7. Let rest for 10 minutes before slicing and serving.

Notes

Substitutions:
Swap ground turkey or a half-beef, half-turkey blend for leaner meat.
Use milk instead of broth for a milder flavor.
